Yuzu in Kyoto goes hand in hand with food culture
Yuzu essential oil distilled by Suginosei in Keihoku, Kyoto. Yuzu from Mizuo and Miyama is used as raw material. Normally, only the peel is used, but Suginosei cuts the yuzu in two and puts it in the distillation kiln. After the distillation, you can experience the “Yuzuyu Foot Bath” in which the yuzu that has softened like an ingredient for jam is added.

Possibilities for utilization are expanding from the perspective of dementia prevention
The limbic system, which controls smell, and the hippocampus, which controls memory, are closely related. As a result, memories and scents are easily recorded in the brain, and the scent triggers a phenomenon in which memories are recalled. This is called the "Proust effect". This is because there is a scene in the novel, In Search of Lost Time, where the scent of madeleines and tea evokes memories of the past. In today's aging society, the number of dementia patients is also increasing. In order to prevent dementia, it turned out to be effective to train the sense of smell on a daily basis.
